俗话说:“民以食为天。”每个地方都有着自己独特的风味小吃。提到美食,大家一定会想到四川成都,因为它有着“吃在四川,味在成都”的美誉。其中最令我垂涎三尺的就数水煮肉片了!

水煮肉片属于川菜系,麻辣,是这道菜的特色。在四川,家家户户都会做这道菜,当然,也是我们家出现频率最高的一道菜。它不光好吃做法也很独特。

做水煮肉片,配料是关键。有碧绿的生菜,乳白的豆腐,晶莹的豆芽和金灿灿的土豆,还有花椒和小米辣。首先把豆腐放入锅中,然后再把去皮的土豆放进去。等过了三四分钟后,再将豆芽和生菜放入锅中。这样,第一道程序就完成了。我们开始第二道程序。把切好的小米辣,姜,干辣椒,花椒放入另一个锅中加油翻炒,等小米辣炒至金黄色时再加入肉片和一碗高汤煮沸,第二道程序也好了。现在只差最后一道程序了,就是把两锅合二为一,这样美味的水煮肉片就做好了。

做好的水煮肉片把菜和肉的颜色都汇聚在了一起,可好看了!乳白色的汤上飘着金黄色的油,汤中浸泡着白色的豆腐,深绿色的生菜,淡黄色的土豆,晶莹的豆芽和鲜美的肉片,再加上金黄色的小米辣点缀,就像绽放于春天的花朵。

水煮肉片不仅看相好,味道也好。

吃水煮肉片就是一种享受。咬一口肉片,那汤汁立刻从嘴里溢出来,流进我的嘴里,瞬间感觉到舌头上的每个味蕾都张开嘴巴尽情地吸允着美味的汤汁,那香味充斥到每个细胞里,等肉片里的汤汁滋润过每一寸味蕾后,又伴着肉片从喉咙里滑下去。三五下水煮肉片就进了我的肚。味道好极了!

第一次吃水煮肉片时,它的味道就深深的刻在我的脑海里。虽然它隐与民间,但是仍掩饰不住其熠熠的光辉。

中国拥有世界上最富戏剧性的自然景观,高原,山林,湖泊,海岸线。这种地理跨度有助于物种的形成和保存,任何一个国家都没有这样多潜在的食物原材料。为了得到这份自然的馈赠,人们采集,捡拾,挖掘,捕捞。穿越四季,本集将展现美味背后人和自然的故事。

香格里拉,松树和栎树自然杂交林中,卓玛寻找着一种精灵般的食物——松茸。松茸保鲜期只有短短的两天,商人们以最快的速度对松茸的进行精致的加工,这样一只松茸24小时之后就会出现在东京的市场中。

松茸产地的凌晨3点,单珍卓玛和妈妈坐着爸爸开的摩托车出发。穿过村庄,母女俩要步行走进30公里之外的原始森林。雨让各种野生菌疯长,但每一个藏民都有识别松茸的慧眼。松茸出土后,卓玛立刻用地上的松针把菌坑掩盖好,只有这样,菌丝才可以不被破坏,为了延续自然的馈赠,藏民们小心翼翼地遵守着山林的规矩。

为期两个月的松茸季节,卓玛和妈妈挣到了5000元,这个收入是对她们辛苦付出的回报。

老包是浙江人,他的毛竹林里,长出过遂昌最大的一个冬笋。冬笋藏在土层的下面,从竹林的表面上看,什么也没有,老包只需要看一下竹梢的叶子颜色,就能知道笋的准确位置,这完全有赖于他丰富的经验。

笋的保鲜从来都是个很大的麻烦,笋只是一个芽,是整个植物机体活动最旺盛的部分。聪明的老包保护冬笋的方法很简单,扒开松松的泥土,把笋重新埋起来,保湿,这样的埋藏方式就地利用自然,可以保鲜两周以上。

在中国的四大菜系里,都能见到冬笋。厨师偏爱它,也是因为笋的材质单纯,极易吸收配搭食物的滋味。老包正用冬笋制作一道家常笋汤,腌笃鲜主角本来应该是春笋,但是老包却使用价格高出20倍的遂昌冬笋。因为在老包眼里,这些不过是自家毛竹林里的一个小菜而已。

在云南大理北部山区,醒目的红色砂岩中间,散布着不少天然的盐井,这些盐成就了云南山里人特殊的美味。老黄和他的儿子树江小溪边搭建一个炉灶,土灶每年冬天的工作就是熬盐。

云龙县的冬季市场,老黄和儿子赶到集市上挑选制作火腿的猪肉,火腿的腌制在老屋的院子里开始。诺邓火腿的腌制过程很简单,老黄把多余的皮肉去除,加工成一个圆润的火腿,洒上白酒除菌,再把自制的'诺盐均匀的抹上,不施锥针,只用揉、压,以免破坏纤维。

即使用现代的标准来判断,诺邓井盐仍然是食盐中的极品,虽然在这个古老的产盐地,盐业生产已经停止,但我们仍然相信诺邓盐是自然赐给山里人的一个珍贵礼物。

圣武和茂荣是兄弟俩,每年9月,他们都会来到湖北的嘉鱼县,来采挖一种自然的美味。这种植物生长在湖水下面的深深的淤泥之中,茂荣挖到的植物的根茎叫做莲藕,是一种湖泊中高产的蔬菜——藕。

作为职业挖藕人,每年茂荣和圣武要只身出门7个月,采藕的季节,他们就从老家安徽赶到有藕的地方。较高的人工报酬使得圣武和茂荣愿意从事这个艰苦的工作。挖藕的人喜欢天气寒冷,这不是因为天冷好挖藕,而是天气冷买藕吃藕汤的人就多一些,藕的价格就会涨。

整整一湖的莲藕还要采摘5个月的时间,在嘉鱼县的珍湖上,300个职业挖藕人,每天从日出延续到日落,在中国遍布淡水湖的大省,这样场面年年上演。

我在网上看了一遍前段时间比较火的一部纪录片——《舌尖上的中国》。

看到“舌尖”,想必必定是展示各地美食,弘扬传统文化的节目吧。想来所料不差,便尝试着欣赏了这个饶趣味味的节目。

本片介绍了华夏各地“南米北面”的饮食差异以及烤松茸油、焖春笋、雪菜冬笋豆腐汤、腊味飘香腌笃鲜、排骨莲藕汤、椒盐藕夹、酸辣藕丁、煎焖鱼头泡饼、煎焗马鲛鱼、酸菜鱼、松鼠桂鱼、侉炖鱼等不一样地区的风味小食。

与其它那些花哨的饮食类的节目不一样,这个节目的真诚、朴实带给我们更多的是超越美食的思考。从中我了解到了人与人的关系,人与食物的关系,人与社会的关系。

在更深一步的思考时,对处在“舌尖上”的中国又有了更深的了解——从最平凡的一锅米饭,一个馒头,到变化万千的精致主食,都是中国人辛勤劳动,经验积累的结晶。今日当我们有权远离自然,享受美食的时候,我们应当珍惜大自然的恩赐,感激的那些经过劳动和智慧成就餐桌美味的人们。

我认为这个节目最重要的不是味觉上的享受,在视觉上比这个纪录片的色泽好得多的遍地都是,而是淳朴的人,人生观和自然观。

我觉得《舌尖上的中国》这部纪录片,是我们每个吃货必看的一部,不看真的是会后悔的。

经过漫长的等待,继《舌尖上的中国》热播之后,续集《舌尖上的中国2》也最终播出了。作为它忠实的观众,我和爸爸每周都会收看。

顾名思义,《舌尖上的中国》描述的是食物,并且,是中国的食物。

所有人都明白,中华礼貌悠悠5000年的历史博大精深,然而,从人类存在的那一天起,便都需要食物来维持生命,所以,有一句话叫“民以食为天”。

从人气火热的重庆麻辣火锅,到金灿灿的菜籽油和香甜可口蜂蜜,没有哪一种美味,是能够简简单单地获得的。

当人们热火朝天地吃着火锅,享受着团圆的喜悦与火锅的温暖,火锅店的老板耗费一个通宵与无数晶粒翻炒三大锅辣椒,作为火锅店五天的底料。

当村民们从油坊买取菜籽油,炒出香气扑鼻的菜,菜籽油经过了道道工序,正由人用尽全身的力气,进行着一次又一次的压榨。

当我们闲来无事,泡一杯蜂蜜,独坐一隅,享受这清香甘甜的滋味时,千里外的一名青年正爬上相当于10层楼高的大树,取得最自然、最甜美的蜜。

食物,是大自然的馈赠,也需要人们去发觉,去寻找,去加工。“一份耕耘,一分收获。”仅有付出了努力,才会获得汇报,每一次小小的成功,都需要汗水的浇灌。

用自我的双手,自我的努力,去获取自我的食物,维持自我的生命,这种坚毅的精神,不正是我们中华土地上的人们一向所坚信的,一向在发扬的吗?
